Whole artichokes marinated ‘according to the Roman Style’. Ready for immediate consumption, seasoned with parsley, garlic, lemon, salt and pepper. Conserved in government liquid: water solution with citric acid and salt.
The artichoke bottoms are obtained once devoid of the flower stalks and interior husks. From the edible part of the artichoke, this is the most consistent one and allows us to prepare canapes and other recipes using their natural shape of a small plate.
The slices are prepared by cutting artichoke hearts into 2 centimeter thick slices. Thus, the artichoke is ready for frying or battering.
